Meal Prep Chocolate Covered Oat Cups
Are you looking for a new sweet snack idea? These chocolate covered oat cups taste delicious, and are so easy to meal prep! They can be easily paired with some fresh fruit for a filling mid-day snack!
Makes 8 cups
1 cup rolled oats
1/4 cup vanilla protein powder
1/2 cup peanut butter
1/4 cup honey
1/2 teaspoon vanilla extract
1 tablespoon chia seeds
Mix all the above ingredients then portion out into a regular size muffin tin. Press down to flatten. Pop in freezer for about 5 minutes.
1/2 cup chocolate chips
1 tablespoon of coconut oil
Add to a bowl. Microwave to melt. Pull the cups out of the freezer, top with melted chocolate. Put
back into freezer for 15 minutes. Store any leftovers in the fridge!
As always, sprinkles are optional, but are so much more fun. This recipe is super easy to make. You can even double the recipe and store in the freezer until you are ready to use them. Let us know if you try them!
