How I Make High Protein Greek Yogurt Blueberry Muffins: A Step-by-Step Guide

Ingredients:


  • 1/4 cup coconut oil or butter, melted

  • 1 cup plain whole milk greek yogurt

Instructions:


  • Preheat the Oven Preheat your oven to 375°F and prepare your muffin tin by lining it with paper liners.

  • Mix Dry Ingredients In a large bowl, combine the flour, baking soda, and salt. Mix them well together.

  • Cream the Sugar In another bowl, add the melted butter or oil and let cool. Once cooled, add sugar and whisk. Then add in eggs, vanilla and milk. Whisk together then gently mix in greek yogurt.

  • Combine Wet and Dry Slowly pour the wet ingredients into the bowl of dry ingredients. Gently fold the mixture until just combined. Be careful not to overmix to keep the muffins light and fluffy.

  • Add Blueberries Carefully fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.

  • Fill Muffin Cups Spoon the batter into the prepared muffin cups, filling each about three-quarters full.

  • Bake Place the muffin tin in the preheated oven and bake for 22-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
